Tuscan White Bean Soup

Ingredients

●    4 slices bacon, chopped

●    1 medium-size sweet onion, coarsely chopped

●    3 large celery stalks, coarsely chopped

●    3 medium carrots, peeled and coarsely chopped

●    1/2 teaspoon kosher salt

●    2 tablespoons chopped garlic

●    1 teaspoon dried Italian seasoning

●    1/2 teaspoon black pepper

●    1 (32-oz.) container chicken broth

●    2 (15.5-oz.) cans cannellini beans, undrained

●    1/3 cup PB2 Original

●    4 cups packed chopped fresh kale

Inspired by rustic Italian flavors, this soup blends tender white beans, aromatic herbs, and vegetables with the subtle, nutty richness of PB2 Original Powdered Peanut Butter. The result? A velvety, satisfying bowl that feels indulgent but fits effortlessly into a balanced lifestyle.

PB2 adds depth and creaminess without heavy cream or excess fat, making this soup a smart, wholesome upgrade to a classic Tuscan favorite. It’s perfect for chilly evenings, meal prep lunches, or anytime you’re craving something nourishing and flavorful.

 

Directions:

  1. Heat a Dutch oven over medium-high heat. Add chopped bacon, and cook, stirring occasionally, until browned and crispy, about 8 minutes. Transfer bacon to a small bowl and set aside. Reserve 1 tablespoon bacon drippings in Dutch oven. (Discard or save remaining drippings for another use.)

  2. Add onion, celery, carrots, and salt to drippings in Dutch oven. Cook, stirring occasionally, until onions are lightly browned and tender, about 8 minutes. Stir in garlic, Italian seasoning, and black pepper. Cook, stirring constantly, until fragrant, about 1 minute.

  3. Stir in chicken broth and undrained beans. Bring to a boil over high heat, stirring occasionally. Reduce heat to medium-low, and simmer until carrots are tender, about 10 minutes.

  4. Add PB2 Original and stir until smooth. Return to a boil; add kale, reduce heat, and simmer, stirring occasionally, until kale is wilted, about 2 minutes.

  5. Divide soup evenly among serving bowls, and top evenly with reserved bacon.
